第 1 步 – 准备酱汁

Stir Fried Mixed Lotus
Story
A delicious and classic Chinese stir fry dish. Lotus root has a wonderful slightly crunchy texture and is an excellent source of vitamins and minerals. Stir-fried mixed lotus is a dish that comprises various types of vegetables, and each of them has its own unique crunch and sweetness. It is best to serve them with fluffy steamed white rice.

- 30g sweet pea
- 30g baby corn
- 5g black ear fungus
- 140g china lotus
- 40g red carrot

- ½ tsp white pepper powder
- 1 tbsp oyster sauce
- ½ tbsp sugar
- ¼ tsp salt
- ½ tsp white rice wine

- ½ tsp garlic (minced)
Cooking Steps
Step 1 – Sauce Making
In a small bowl, mix all the goodness, including white pepper powder (½ tsp), oyster sauce (1 tbsp), sugar (½ tbsp), salt (¼ tsp), and white rice wine (½ tbsp). This sauce is the soul of this dish, so don’t mess it up!
Note: You can substitute oyster sauce with the ‘vegetarian’ oyster sauce made with mushroom extract. Alternatively, replace the oyster with half the amount of light soy sauce plus some sugar.
Step 2 – Prepare vegetables
For this dish, prepare sweet pea (30g), baby corn (30g), black ear fungus (5g), china lotus (140g), and red carrot (40g). Although you can stir-fry the lotus root alone, it is tastier by adding other vegetables with different flavors and colours. In this recipe, we use crunchy vegetables such as sweet peas , baby sweet corn, and carrots.
After preparing the ingredients, wash all the ingredients thoroughly and cut them into round slices.
Step 3 – Boil vegetables
In a pot, bring the water to a boil. After the water is boiled, add each type of vegetable separately and boil them for 20 seconds, while china lotus has to boil for 30 seconds to 1 minute. In this way, all vegetables can be cooked evenly as different types of vegetables require different cooking times.
Then, rinse them under running water to cool them down to the desired consistency and drain well. This way will make the vegetables crunchier and less soggy.
Step 4 – Stir fry minced garlic
In a wok, heat up oil (1 tbsp) over medium heat and sauté the minced garlic (½ tsp) until fragrant.
Step 5 – Stir-fry everything together
Add in the sauce and stir repeatedly, bringing it to a boil. Then, add in all the vegetables and stir fry them over high heat for a minute. Reduce the heat to a gentle but consistent simmer and cook, stirring or flipping the vegetables occasionally, until the vegetables are well cooked with the sauce.
Step 6 – Plating & Serving
Voila! Here you go! You can now enjoy the classic and tasty stir-fried mixed lotus dish over rice for a simple, healthy meal!
